Turkey and Veggies Meatballs

Turkey is one of my favorites Lean meats. Turkey breasts are full of protein and low in fat, this makes it an ideal healthy meal choice. Here is my latest recipe, hope you all like it. Feel free to add your personal touch to it. If you prefer different vegetables instead of the ones I have chosen, go right ahead. One way to come up with good recipes is by experimenting and not being afraid to try new things. :)

  • 1 Lb of extra lean ground Turkey
  • 1 Cup - Chopped Red Onion
  • 1 Cup - Chopped Red Pepper
  • 1 Cup - Chopped Mushroom
  • 1/2 Cup - Quick Oats
  • 6 Cloves - Crushed Garlic
  • 1 Teaspoon - Crushed Black Pepper
  • 1 Teaspoon - Oregano
  • 1/2 Teaspoon - Thyme
  • 1 Teaspoon - Onion Powder
  • 1 Teaspoon - Ms.Dash Salt Free Fiesta Lime Powder
  • A pinch - Cayenne Pepper (you can add a bit more if you like it spicy)
  • A pinch - Sea Salt
  • 3 - Egg whites and 1 yolk

In a large bowl mix all the ingredients, be careful not to over mix as this can make the meat tough. Separate the meat into regular size meatballs and place them in the baking pan that has been lightly oiled with cooking spray.  Place them in the oven and bake for 45-50 mins, or until light brown. Make sure they are fully cooked before eating them. Serve them with your favorite sides, like steam veggies, brown rice, quinoa, whole wheat pasta, or spaghetti squash.

I paired them with 1/2 cup of whole wheat spagetti with a bit of marinara sauce. Hope you enjoy it and let me know your thoughts.
