Spicy Tuna Veggie Patties

This is one of my goto meals when on a budget or simply when I only seem to have a couple cans of tuna lying around and some veggies in the fridge. It is a healthy and delicious way to spice up you canned tuna :) 

Ingredients:

  • 2- 5oz cans of white albacore tuna in water drained
  • 1- cup of chopped onions
  • 1- cup of chopped peppers
  • 1/2 cup of whole kernel sweet corn
  • 2 tablespoons of diced jalapaneno peppers
  • 3 egg whites and 1 yolk
  • 1 cup of quick oatmeal
  • 3 cloves of minced garlic
  • 1 teaspoon of black pepper

Preheat oven to 375 degreesSpray baking pan with Pam olive oil spray. In a large bowl mix all the ingredients together, then make them into patties ( these were about 3 inches wide ) put them in the baking pan and bake for about 30 mins.. or until light brown and enjoy:)
