Coconut Flour Pumpkin Protein Cookies

I'm happy to share with you all my Pumpkin/Coconut/Oatmeal/Protein Cookies. I came up with the idea of making these cookies after a coworker of mine brought some of her own oatmeal cookies into work, and I thought I would make some with more protein, less sugar and less fat. You can add some of your own touches to them.  Next time I make them I plan to add some raisins and maybe some nuts like Pecans or Walnuts. Try them out next time you crave some carbs and tell me what your thoughts are, hope you all like it.

Dry Ingredients:

  • 1 Cup of Quick Cooking Oats
  • 1 Cup of Coconut Flour
  • 1 Scoop of Vanilla Protein Powder
  • 2 Tablespoons of Truvia
  • 1.5 Tablespoons of Cinammon 
  • 1 Teaspoon of Ginger Powder
  • 1 Teaspoon of Nutmeg 
  • 1/2 Teaspoon of Clove Powder
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Salt

Wet Ingredients:

  • 3 Tablespoons of Coconut Oil
  • 3 Tablespoons of Pumpkin Puree
  • 3 Egg Whites (One Yolk)
  • 1 Teaspoon of Vanilla Extract
  • 6oz Fat Free Plain Greek Yogurt
  • 4oz Applesauce baby food
  • 1/2 cup of unsweetened Almond Milk

Preheat Oven at 350 degrees, spray a baking pan with non-stick cooking spray. You will need two mixing bowls. In One bowl, mix all the dry ingredients together and in the other bowl mix all the wet ingredients together. Add dry mix to wet mix. After you have mixed the batter, use a spoon to place on baking pan and bake at 350 degrees for 12-15 mins or until golden brown. This makes about 16 cookies.
